How Badiani maintains artisanal quality at scale with Nory

Badiani is an authentic gelato shop, with its roots firmly in Italian history. The first shop opened in the centre of Florence in 1932 before making its debut in London in 2015. Since launching internationally, Badiani has gone from strength to strength. It has grown from 11 stores in 2022 to 30 in 2024 and expanded into France and Spain. 🤯

The shop prioritises quality above everything else, making sure the gelato is delicious, sustainable, and like nothing else on the market.

We don’t operate on a model of mass production because we don’t believe in mass production. Even though financially it makes more sense, it compromises on the quality of the product.

But success wasn’t always easy. Along the way, Badiani faced challenges — mostly with managing inventory from its CPU.

The Challenge

Juggling different inventory needs across markets and locations was proving tricky for Badiani. They were offering different flavours by country and local demographics but didn’t have a centralised system to manage inventory in real-time.

Horchata is a flavour that we constructed specifically for the Spanish market. There’s also a massive demographic of Japanese tourists in France, so we have matcha and black sesame in Paris.”

This made it hard to successfully manage supply chains, inventory levels, and costs across all these different locations.

Manually tracking and managing inventory was also time-consuming and ineffective. The shop struggled to make quick and informed decisions about its supply chains to optimise costs and meet customer demand

They needed a system that provided real-time access to inventory insights.

Fortunately, they found Nory.

The Solution

We partnered with Badiani to custom-build an AI-powered CPU (known as the laboratory) that meets their needs:

  • Track inventory from the central kitchen in real-time. Throughout the day, our CPU dashboard shows Badiani its stock counts, new deliveries, and POS sales across different locations. The results? They can make quick and informed decisions to optimise inventory and increase revenue for each market and demographic.

Nory’s AI-powered CPU function with automatic orders is exactly what we wished for.

  • Make accurate sales forecasts. By tracking inventory and sales in one location, Badiani can now create accurate sales forecasts. In fact, in their UK operation, Badiani has achieved 96% sales accuracy with Nory! With these forecasts, they can optimise their inventory orders and create optimal labour schedules to meet demand. This means preventing overspending on wages during quiet times, which keeps profit margins healthy.
  • Expand operations to new locations. With the laboratory in place, Badiani is in a better position to scale and expand to new locations. They can use one system to track ingredients and suppliers across the board, ensuring they have all the data they need to operate new locations successfully.
  • Improve supply chain management. Badiani works with a variety of local suppliers from different countries to provide the best ingredients for their gelato. To effectively manage these relationships, they need a system to track supplier costs, ingredient levels, and customer demand. Nory Automated CPU does all of these things, allowing Badiani to improve their supplier relationships and ensure they have enough top-quality ingredients to meet customer demand.
  • Reduce food waste. Badiani produces all of its gelato fresh on the day, with fresh ingredients coming into the laboratory every day. But with fresh ingredients comes a higher risk of food waste — things are more likely to spoil quickly if they aren’t used in time. With Nory, Badiani can optimise its inventory orders to align with customer demand in different locations. This means they order the right amount of ingredients, and reduce the amount of fresh produce that goes to waste.
  • Access real-time sales data with Vita Mojo. Nory’s integration with Vita Mojo helps Badiani access valuable insights about sales and performance. It has allowed the gelato shop to accurately forecast sales and demand, meaning they can optimise spending and inventory levels at the laboratory level.

It’s great that Vita Mojo and Nory speak to each other. We can see our inventory levels in real-time and actually forecast with accuracy.

What’s next for Badiani?

Badiani has plans to continue expanding in the future. For now, they’re happy maintaining and refining their current operations. They’ve had such big growth over the last few years that they now want to focus on being the best they can be.

When the time comes, Nory will strengthen Badiani’s growth. Our AI-powered system will continue to meet their needs and support the central production operation as the business expands.

We really look forward to growing in the future, and having Nory alongside us every step of the way. Nory has been fundamental in tailoring a solution for our growth.
